This pancake tower is a showstopper that works beautifully for any celebration, and the best part is how simple it is to put together. Layers of thin pancakes are stacked with mayonnaise, tomato, lettuce, ham, carrot, cheese, tuna and hard-boiled egg to create something that looks like a savory cake.

In Argentina, this layered pancake cake is often made for special occasions like Christmas or New Year's Eve. It is served cold, sliced into wedges just like a dessert cake, and it can be prepared ahead of time and kept covered in the fridge until you are ready to serve.

The most popular fillings are a generous amount of mayonnaise, grated carrot, cooked ham, lettuce, tuna and hard-boiled egg. You can also swap in other fillings you enjoy, such as tomato, cheese, roasted vegetables, smoked salmon or shredded roast chicken.

Because it holds up so well in the fridge, this is a great make-ahead dish for potlucks and parties. Let it chill thoroughly so the layers set and the flavors come together, then serve it fresh and cold.

Ingredients for Pancake Tower
For 8 servings
- 150 g wheat flour
- 3 medium eggs
- 400 ml whole milk
- Salt to taste
- 25 g melted butter (plus a little more for greasing the pan)
- Mayonnaise to taste
- 1 tomato, thinly sliced
- 1 head of lettuce, finely chopped
- 4 slices cooked ham
- 2 carrots, grated
- 4 slices cheese
- 50 g canned tuna, drained
- 2 hard-boiled eggs

How to Make Pancake Tower Step by Step
1. Prepare the Pancake Batter
Start by making the pancakes. Add 150 grams of wheat flour, 3 medium eggs, 400 ml of whole milk, salt to taste and 25 grams of melted butter to a blender cup or a bowl. Blend well until you have a smooth, thin batter. Set aside.

2. Cook the Pancakes
Heat a pan about 24 cm in diameter and grease it with a little butter or oil. Pour in a ladleful of batter and spread it evenly across the pan. Let it cook until small bubbles start to appear.

3. Flip and Finish the Pancakes
Flip the pancake and let it cook on the other side. Repeat until you have used all the batter. With this amount, you will get 7 pancakes. Set them aside until they cool.

4. First Layer: Tomato
Once all the pancakes are cooked and cool, start assembling. Place the first pancake on a plate or serving platter and spread a generous spoonful of mayonnaise over it. Spread the mayonnaise well and top with 1 tomato, previously washed and cut into thin slices.

5. Second Layer: Lettuce
Place the next pancake on top, cover it with mayonnaise and add 1 head of lettuce, previously washed, dried and finely chopped.

6. Third Layer: Cooked Ham
Continue with the third pancake, topping it with mayonnaise and 4 slices of cooked ham.

7. Fourth Layer: Grated Carrot
Add the fourth pancake to the tower and cover it with mayonnaise and 2 grated carrots.

8. Fifth Layer: Cheese
Cover the fifth pancake again with mayonnaise and add 4 slices of cheese.

9. Sixth Layer: Tuna and Egg
Place the sixth pancake, spread the mayonnaise evenly and distribute 50 grams of drained canned tuna and 1 hard-boiled egg cut into slices.

10. Top Layer and Chill
Add the seventh and final pancake and cover it generously with mayonnaise and 1 grated hard-boiled egg spread over the entire surface as decoration. Then refrigerate the pancake tower until serving time so it can be enjoyed nice and cold.

Tips for the Best Pancake Tower
Make It Ahead
You can prepare the pancake tower in advance and keep it in the fridge well covered so the layers set and firm up. Serve it chilled for the best texture and flavor.
Vary the Fillings
Beyond the classic fillings, you can add tomato, cheese, roasted vegetables, smoked salmon or shredded roast chicken. Just keep the mayonnaise generous between layers so everything holds together.
Slice Like a Cake
Serve the pancake tower cold, cut into portions as if it were a cake. This makes it easy to share and keeps each slice neat and layered.
