This salmon and spinach lasagna is one of the easiest lasagnas you can make, and it turns out absolutely delicious. Instead of pre-cooking the filling, we combine the ingredients raw and let the oven do the work, which makes the whole process much faster and simpler.

Fresh spinach leaves and chunks of fresh salmon get layered with pasta sheets and a silky homemade bechamel, then finished with grated cheese that melts into a golden, crunchy top. It is a comforting main course that feels special enough for guests but easy enough for a regular weeknight.

Ingredients for Salmon and Spinach Lasagna
This recipe makes 2 individual servings.
- 40 g butter
- 40 g wheat flour
- 400 ml cold whole milk
- Salt
- Ground black pepper
- Nutmeg
- 6 square lasagna sheets
- Salt
- 100 g spinach leaves
- 250 g fresh salmon
- Ground black pepper
- 3 tablespoons grated cheese

How to Make Salmon and Spinach Lasagna Step by Step
1. Make the Bechamel
First, make the bechamel. Heat 40 g of butter in a saucepan and toast 40 g of wheat flour in it. Pour in 400 ml of cold whole milk and cook the mixture until it thickens. Season with salt, ground pepper, and ground nutmeg. Set aside.

2. Boil the Lasagna Sheets
Now move on to the lasagna. First, preheat the oven to 180 °C (355 °F). Boil 6 lasagna sheets in salted water following the manufacturer's instructions. Lay them out on a clean cotton cloth.

3. Mix the Spinach with Half of the Bechamel
Set aside half of the bechamel for the topping, and mix the rest with 100 g of chopped spinach leaves. Season with salt and pepper to taste.

4. Build the First Layer
Spread a little bechamel in the bottom of 2 dishes. Place one lasagna sheet in each dish, then divide half of the spinach and bechamel mixture and half of the 250 g of fresh salmon, previously cut into pieces and seasoned with salt and pepper, between the two dishes.

5. Repeat and Top the Lasagna
Repeat with another lasagna sheet in each dish and cover with the remaining spinach and salmon. Finish with a lasagna sheet, the reserved bechamel, and top with 3 tablespoons of grated cheese.

6. Bake the Lasagna
Bake the salmon and spinach lasagnas at 180 °C (355 °F) for 20-25 minutes, until golden. You can broil them for the last few minutes.

7. Serve It Hot
Serve the lasagna freshly made, straight from the oven, while the cheese is still melted and bubbling.

Tips for the Best Salmon and Spinach Lasagna
Pick the Right Cut of Salmon
You can use fresh salmon fillets for this recipe, though the belly or tail cuts work beautifully too. They are not only more affordable, but because they are fattier, they add extra flavor and juiciness to the lasagna.
Fresh or Frozen Spinach Both Work
Here we used fresh spinach leaves, but frozen spinach works great as well, since it blends perfectly when mixed with the hot bechamel. If you like, you can also add extra grated cheese along with the spinach.
Keep the Bechamel Loose and Choose a Good Cheese
The bechamel we made is not overly thick, since we use it both inside with the spinach and as the sauce that covers the lasagna, which gives every bite a delicious texture. For the crunchy topping, we chose emmental, but parmesan, gruyere, or pecorino are also excellent options. We made this lasagna in individual dishes, though you can prepare it the same way in one large baking dish, and you can even double or triple the quantities to make lasagna for 4 or 6 people.
