Caldo verde is one of Portugal's most beloved comfort foods: a silky potato and onion broth, loosened with good olive oil, filled with ribbons of dark leafy greens and finished with slices of smoky chorizo. It is humble cooking at its best, the kind of bowl that warms you from the inside out on a cold evening.
The name means "green broth," and the color comes from couve galega, a sturdy kale-like cabbage that is the heart of the dish. If you cannot find it, curly kale or another hearty green works beautifully, so this soup is easy to make wherever you live.
Everything comes together in one pot with just eight everyday ingredients, and most of the cooking time is hands-off simmering. Serve it hot as a starter or a light main course with a thick slice of crusty bread for dipping.

Ingredients for Caldo Verde
This recipe makes 4 generous servings.
- 400 g kale or couve galega (Portuguese collard greens)
- 600 g potatoes
- 1 medium onion
- 2 garlic cloves
- 1 smoked chorizo
- 1.25 liters water
- Salt
- 80 g olive oil

How to Make Caldo Verde Step by Step
1. Prepare the greens
Wash 400 g of kale very well, remove the tough central stalk, and slice the rest into fine ribbons. The greens are the star of this soup, so take a moment to cut them evenly so they cook at the same rate.

2. Peel and chop the vegetables
Peel and cut 600 g of potatoes and 1 medium onion into regular chunks, then peel 2 garlic cloves and leave them whole. Even pieces mean the potatoes will soften at the same time, giving you a smooth, lump-free broth later.

3. Start the broth
Place a pot over high heat with the potatoes, onion, garlic cloves and 1 smoked chorizo, then pour in 1.25 liters of water. Once the water comes to a boil, add salt and 40 g of olive oil.

4. Simmer the base
Cook for 20 minutes over medium-low heat with the lid on, until the potatoes are completely tender and the chorizo has infused the broth with its smoky flavor.

5. Blend until smooth
Remove the chorizo and set it aside, then blend the mixture with an immersion blender until you have a smooth, homogeneous, lump-free liquid cream.

6. Add the greens and olive oil
Turn the heat back up and, when the cream begins to boil again, add the kale and the remaining 40 g of olive oil, stirring well to combine.

7. Finish cooking
Lower the heat to medium-low and cook for 20 more minutes with the lid on. Taste at this point and adjust the salt if needed.

8. Serve with chorizo slices
Ladle the caldo verde into bowls and top each serving with a few slices of the reserved chorizo.

Tips for the Best Caldo Verde
Choosing the right greens
The traditional green is couve galega, known in Spain as berza, but curly kale or even collard greens make excellent substitutes. Whatever you use, remove the tough central stalk and slice the leaves as thinly as you can so they turn silky rather than stringy.
Picking the chorizo
A good smoked chorizo is essential because it seasons the entire pot as it simmers. Portuguese chorizo can be hard to find outside Portugal, so a quality smoked Spanish chorizo is the closest and most delicious stand-in.
Getting the texture right
Blend the potato base until it is completely smooth before adding the greens, and keep the finished soup fairly thin, as is traditional. If it thickens too much as it sits, simply loosen it with a splash of hot water or broth.
