Chocolate rocks are small, crunchy bites made from dark chocolate and almond slivers, and they come together in about ten minutes with almost no effort. The melted chocolate coats the almonds and sets into rustic little clusters that snap when you bite into them.

They are the kind of sweet you keep on hand for the mid-afternoon coffee or a cup of tea, and because they are bite-sized, you can make them as small or as generous as you like. With only two ingredients and no baking, they are a great first project for anyone new to making sweets.

How to Make Chocolate Rocks Step by Step

1. Melt the chocolate

Melt 100 g of dark chocolate drops in the microwave for a few seconds, or over a bain-marie, stirring until completely smooth. Keep an eye on it so the chocolate does not seize or burn.

2. Mix in the almonds

Stir 75 g of almond slivers into the melted chocolate until every piece is evenly coated. Work fairly quickly, while the chocolate is still fluid and easy to mix.

3. Shape the little mounds

Line a tray or plate with parchment paper and spoon out small mounds of the mixture, using two teaspoons to help you portion them neatly. Since these are bite-sized sweets, keep the clusters fairly small.

4. Chill and serve

Leave the tray in the fridge for at least 1 hour, or until the chocolate has cooled and set completely. Once firm, the rocks lift cleanly off the paper and are ready to serve.

Tips for the Best Chocolate Rocks

Choose your nuts

Almond slivers work beautifully here, but you can equally use almonds with or without skin, chopped with a knife, or any other nuts you like. Just keep the total weight the same so the chocolate still holds everything together.

Try some variations

There are plenty of ways to change these up: add orange zest, ground cinnamon, a mix of walnuts, or even stir in some cereal. All of these have been tested and loved, so feel free to pick your favorite.

Keep them small

These are bite-sized sweets, so avoid making the mounds too large. Two teaspoons are the easiest tool for portioning even little clusters onto the parchment paper, and smaller rocks also set faster.
