Cocadas are a beloved coconut sweet found across Latin America, Spain, and the Philippines. Made from just shredded coconut, sugar, and egg yolk, they bake into little golden mounds that stay wonderfully juicy inside. Their tropical flavor and chewy texture make them completely irresistible.
The name comes from the word coco, the star ingredient. Food historians believe this sweet has roots in Spanish and Portuguese baking, where almonds and sugar were common. When those recipes traveled to the Americas, local cooks swapped almonds for shredded coconut, creating the cocada we know today.

Classic cocadas use shredded coconut, sugar, and egg. Depending on where you are, they can be baked until firm or left softer and more syrupy. This version lands right in the middle: lightly golden on the outside, tender and moist within.

Ingredients for Cocadas
This recipe makes 12 cocadas.
- 125 g shredded coconut
- 200 ml water
- 200 g white sugar
- 1 XL egg yolk or 2 M egg yolks
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla paste

How to Make Cocadas Step by Step
1. Mix the Coconut, Sugar, and Water
Start by putting 125 grams of shredded coconut, 200 ml of water, and 200 grams of sugar into a saucepan. Stir everything together well so the coconut is evenly coated and the sugar begins to dissolve.

2. Cook the Mixture Until It Pulls Away
Place the pan over medium heat and keep stirring without stopping. Cook until you get a thick coconut paste that pulls away from the sides of the pan and no liquid remains. This usually takes about 10 minutes.

3. Cool and Add the Yolk, Cinnamon, and Vanilla
Transfer the mixture to a bowl and let it cool to room temperature. Once cooled, add 1 XL egg yolk, 1/4 teaspoon of cinnamon, and 1/2 teaspoon of vanilla paste. Mix well until you have a smooth, homogeneous mixture.

4. Shape and Bake the Cocadas
Preheat the oven to 180 °C with top and bottom heat and line a baking tray with parchment paper. Transfer the coconut mixture to a piping bag fitted with a star nozzle and pipe 12 small mounds. You can also shape them with a spoon if that is easier. Bake for 15–20 minutes, watching closely until they just begin to turn golden.

5. Let Them Cool
Remove the tray from the oven and let the cocadas sit for 5 minutes. Then move them to a wire rack and let them cool completely.

6. Serve
Once cold, the cocadas are ready to enjoy on their own or as the perfect companion to a cup of coffee with milk.

Tips for the Best Cocadas
Watch the Baking Time Closely
To get that ideal texture — golden outside and juicy inside — the baking time is everything. Keep an eye on them and pull them out as soon as they start to color. Overbaking will dry them out and lose that signature chew.
Adjust the Texture to Your Taste
Depending on the country, cocadas can be baked until firm or left softer and more syrupy. If you prefer a juicier sweet, take them out a minute or two earlier. For a firmer bite, let them go a little longer, but never past a light golden brown.
Cool Completely Before Storing
Let the cocadas cool fully on a wire rack before storing them. They keep well in an airtight container at room temperature for a few days. If they soften too much, a quick minute in the oven brings back their edges.
