  • 4 eggs

How to Make Coconut Flan Step by Step

1. Preheat the oven and make the caramel

Preheat the oven to 170 °C (340 °F) and start by making the caramel for the flan molds. In a small saucepan, combine 125 g sugar with 15 g water and heat over medium heat. Without stirring, wait until the sugar turns golden around the edges; at that point, swirl the pan in circular motions until all the sugar dissolves and the mixture turns a golden color. Remove from the heat.

2. Pour the caramel into the molds

Immediately, before it crystallizes, pour the liquid caramel into the bottom of the flan molds. We used 3 individual molds and one slightly larger one of about 350 ml. Set the molds aside while you prepare the mixture.

3. Beat the eggs with vanilla and salt

In a large bowl, mix 4 eggs with 1 teaspoon vanilla essence and 1 pinch salt.

4. Add the condensed milk, coconut milk, and shredded coconut

Next, add 390 g condensed milk and 300 ml coconut milk. Beat until you have a smooth, homogeneous mixture, but do not over-whisk it into a foam. Optionally, you can add 100 g shredded coconut to the mixture to intensify the coconut flavor and add texture.

5. Pour the mixture into the molds

6. Bake the flans in a water bath

Place the filled molds in a baking tray and add hot water to the tray until it reaches halfway up the sides of the molds, so they cook in a water bath. Put the tray in the preheated oven and bake the flans at 170 °C (340 °F) for about 40 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool the flans at room temperature

Once the flans are cooked, remove them from the oven. In our case, since we used molds of different sizes, the small ones stayed in the oven for 40 minutes and the large one needed 5 more minutes. Cooking time can vary depending on the oven and even the molds, since not all transmit heat the same way. Remove the tray from the oven, take the molds out of the water, and let the flans cool at room temperature.

8. Chill in the refrigerator for 3 hours

Then, refrigerate the flans for at least 3 hours, or until you are ready to serve them. To unmold, run a spatula around the edges of the mold, turn it upside down onto a plate, and it is ready to serve.

Tips for the Best Coconut Flan

Use the right ingredient proportions

The correct proportion of ingredients is important for a perfectly set and creamy coconut flan. Stick to the quantities listed so the custard firms up without becoming rubbery.

Do not overbeat the mixture

Do not beat the mixture excessively; just mix enough to combine the ingredients, avoiding adding too much air. A gentle mix keeps the flan smooth and free of bubbles.

Watch the baking time

Cooking time can vary depending on your oven and the molds you use, since not all transmit heat the same way. Check the flans with a toothpick and adjust the time as needed.
