This no-bake flan is the easiest way to enjoy the classic Spanish custard without turning on the oven. It is perfect for making a small batch, and the ingredients are the same as the traditional version, only the cooking method changes. The result is a smooth, delicate custard that sets in the fridge overnight.

Making flan at home is very simple; you just need to wait for it to set in the cold of the refrigerator to achieve that characteristic soft bite. This stovetop method uses a water bath and gentle heat to cook the custard evenly.

How to Make No-Bake Flan Step by Step

1. Beat the eggs

Place the 2 medium eggs in a wide bowl. Beat well with a whisk or a fork, trying not to incorporate too much air while mixing.

4. Mix the custard

Mix the custard until smooth and homogeneous. Try to avoid creating too many bubbles so the flan sets with a silky texture.

5. Fill the molds and set up the water bath

Divide the mixture among 4 flan molds, leaving about half a centimeter free at the rim. Place the molds in a heavy-bottomed pot and pour in hot water until it reaches about halfway up the sides of the molds, to cook the flans in a water bath.

6. Cook covered, then rest

Cover the pot and cook the flans over low heat, without boiling, for 30 minutes, until the flan is set (you can check by inserting a toothpick). Remove from the heat, uncover and let rest for 15 minutes. Then remove the flans from the pot and let them cool on a rack.

7. Chill, unmold and serve

Refrigerate the flans overnight. The next day, unmold them by running a knife around the edges and carefully turning the mold over onto a plate. Serve.

Tips for the Best No-Bake Flan

Flavor variations

This is a basic flan recipe, but you can flavor it by adding vanilla extract to the mixture or by infusing the milk with cinnamon and lemon or orange. These small additions make the custard even more aromatic.

Milk options

You can choose the type of milk according to your preferences. To make this no-bake flan lactose-free, simply replace the cow's milk with any unsweetened plant-based option.

Serving ideas

Serve the flans as they are or accompany them with whipped cream or any sweet sauce of your choice. They are delicious on their own, but a little topping makes them extra special.
