Pulpo a la Mugardesa is a traditional Galician seafood stew that brings the deep, savory flavor of the sea straight to your table. Tender octopus and chunky potatoes simmer together in a rich broth built on a gentle sofrito of onion, garlic and peppers, with a touch of sweet paprika and white wine. It is the kind of dish that fills the kitchen with warmth and the kind of comfort that only a slow-simmered guiso can deliver.

This style of cooking octopus was a regular on family menus, often simply called guiso de pulpo, because the method follows the rhythm of any good stew: a vegetable sofrito, a flavorful broth, and a slow simmer that lets everything come together. You can start with fresh octopus or with already cooked octopus to save time, and either way the result is a satisfying main course that serves six.

How to Make Pulpo a la Mugardesa Step by Step

1. Cook the octopus

Wash the 2 kg octopus well under cold running water to remove any impurities. Cook it in plenty of boiling water for about 40 minutes, which is the right time for an octopus of this size.

2. Reserve the octopus and its cooking water

After this time, check whether it is tender by piercing the top part of one of its tentacles. Once it is tender, take it out of the water and set it aside together with the cooking water.

3. Chop the vegetables for the sofrito

While the octopus cooks, prepare the ingredients for the sofrito: finely chop 2 garlic cloves and 1 large onion. Also cut ½ green bell pepper and ½ red bell pepper into strips.

Set a wide cazuela over the heat and coat the bottom with a film of extra virgin olive oil. Add the chopped garlic and onion and sauté over medium heat for 5 to 10 minutes, until they start to turn translucent.

Tips for the Best Pulpo a la Mugardesa

Use fresh or cooked octopus

To make this recipe, the octopus has been cooked beforehand and the cooking liquid reserved to add to the stew and give it all of its flavor. If you want to save time, you can start with already cooked, packaged octopus and replace the cooking water with fish stock or simply water. The octopus flavor will not be as pronounced, but it will still be just as tasty.

Freeze fresh octopus first

If you choose to use fresh octopus, it is important to remember that, for it to be tender, it must be frozen for at least 48 hours, which will soften its fibers without the need to beat it repeatedly.

Crack the potatoes for a creamier stew

Cracking the potatoes instead of cutting them cleanly releases starch into the broth, which naturally thickens the stew and helps it cling to the octopus. Take the time to simmer gently once the broth is added, and only stir in the octopus at the very end so it stays tender.
