Salsa Périgueux is a classic sauce from the Périgord region of France, built on a concentrated meat stock enriched with black truffle. Deep, earthy and glossy, it is the kind of sauce that turns a simple grilled steak or roast into something memorable.
The base is a dark meat stock, so if yours isn't concentrated enough, simply simmer it down first until it has the body this sauce needs. From there it's a quick roux with shallot, the truffle and its juice, and a final knob of butter for shine.

We make this version with canned black truffle, which is far easier to find than fresh, and we add its juice too so none of the aroma is lost. The whole thing comes together in about half an hour and makes roughly 600 ml, enough for four generous servings.

Ingredients for Salsa Périgueux
Makes about 600 ml, serving 4.
- 50 g butter
- 50 g shallot
- 50 g wheat flour
- 500 ml meat stock
- 15 g canned black truffle
- Salt
- Ground black pepper

How to Make Salsa Périgueux Step by Step
1. Sauté the shallot
Heat 25 g of the butter in a skillet, finely chop the 50 g of shallot and sauté it over low heat for 5 minutes until soft and translucent.

2. Toast the flour
Add the 50 g of wheat flour and toast it for a few minutes, stirring constantly so it cooks evenly and loses its raw taste.

3. Pour in the stock
Pour in the 500 ml of meat stock little by little while whisking so no lumps form. Cook for 3-4 minutes until the roux comes together and thickens.

4. Add the truffle and its juice
Pour in the juice from the canned truffle and stir so it blends in, then cook for 5 minutes over low heat. Finely chop the 15 g of black truffle and add it to the skillet.

5. Finish with butter
Add the remaining 25 g of butter and stir until the mixture is completely smooth. Taste and season with salt and pepper to your liking.

6. Serve
Serve the sauce hot to accompany all kinds of meat.

Tips for the Best Salsa Périgueux
Start with a concentrated stock
This sauce needs a dark, well-concentrated meat stock. If yours is thin, simmer it down at the start until it has the body and depth the sauce requires.
Make the most of the truffle
Canned black truffle is a practical stand-in for fresh, so use its juice as well as the truffle itself to capture every note of flavor.
Choose your texture
We like leaving the pieces of shallot in the sauce, but you can blend it before adding the truffle for a completely smooth, fine result.
