Tarta San Marcos is a classic of traditional Spanish baking, a showstopping layer cake that looks like it came from a pastry shop but is surprisingly easy to make at home. With its fluffy sponge cakes soaked in syrup, rich truffle and cream fillings, and a golden toasted yolk topping, it's the kind of dessert that makes any celebration feel special.
The long list of ingredients and multiple preparations might seem intimidating, but the detailed step-by-step instructions below break everything down into simple, manageable tasks. The result is a traditional cake with tender, syrup-soaked layers, and the truffle, cream, and toasted yolk give it a unique and delicious character.
My advice is to make it the day before you plan to serve it and keep it in the refrigerator, so all the flavors can settle and it tastes even better. This cake is ideal for birthday parties and those moments when you want a spectacular dessert to surprise your guests. They won't believe it's completely homemade!

Ingredients for Tarta San Marcos
For 8 servings
- 3 medium eggs
- 90 g wheat flour
- 90 g sugar
- Butter (for greasing the pans)
- 35 g water
- 95 g sugar
- 2 egg yolks
- 5 g cornstarch
- 1 teaspoon vanilla extract
- 50 g water
- 50 g sugar
- 100 g cold heavy cream
- 20 g unsweetened cocoa powder
- 20 g powdered sugar
- 300 g cold heavy cream
- 40 g powdered sugar
- 30 g crocanti or toasted almond cubes
- Sugar (enough to cover the cake)

How to Make Tarta San Marcos Step by Step
1. Separate the eggs
Start by making the sponge cakes. Preheat the oven to 180 °C (350 °F) with top and bottom heat. Separate the whites and yolks of 3 medium eggs into 2 different bowls.

2. Beat the yolks
Beat the 3 yolks with an electric whisk until they have doubled in volume, are fluffy, and have a light yellow color.

3. Add the flour
Sift 90 grams of wheat flour over the yolks and fold it in well until no traces of flour remain. Set this mixture aside.

4. Whip the whites with sugar
Beat the 3 egg whites at medium speed. When they start to foam, gradually add 90 grams of sugar. Continue beating until you have a firm and glossy meringue.

5. Mix in a third of the meringue
Add a third of the meringue to the yolk mixture and beat vigorously to loosen the batter.

6. Fold in the rest
Pour the previous mixture over the remaining meringue and fold everything together with gentle, enveloping movements.

7. Check the batter
The batter is ready when it is smooth and no unmixed ingredients remain.

8. Bake the sponges
Divide the batter among 3 15-cm (6-inch) springform pans that you have previously greased with butter. Smooth the surface lightly if needed and bake for 15-20 minutes, or until a toothpick inserted comes out clean.

9. Cool the sponges
Remove the pans from the oven and let them cool in the pan for about 15 minutes. Then unmold and let them cool completely on a wire rack.

10. Make the syrup for the yolk
While the sponges cool, prepare the yolk topping. Put 35 grams of water and 95 grams of sugar in a saucepan. Heat over medium heat until the sugar dissolves. Set this syrup aside.

11. Mix the yolks with cornstarch and vanilla
In a bowl, combine 2 egg yolks, 5 grams of cornstarch, and 1 teaspoon of vanilla extract. Mix until fully integrated.

12. Add the syrup
Pour the reserved syrup over the yolk mixture in a thin stream while whisking constantly to prevent the yolks from curdling. Then place the mixture over medium heat.

13. Thicken the yolk
Keep stirring constantly and let it thicken slightly. Then transfer to a bowl, cover with plastic wrap directly on the surface, and let it cool completely. Set aside at room temperature.

14. Make the soaking syrup
To make the syrup for soaking the sponges, put 50 grams of water and 50 grams of sugar in a saucepan and bring to a boil. When the sugar dissolves, remove from heat and transfer to a bowl to cool completely. Set aside at room temperature.

15. Make the truffle filling
For the truffle filling, put 100 grams of cold heavy cream, 20 grams of unsweetened cocoa powder, and 20 grams of powdered sugar in a bowl. Beat at medium speed until you have a firm and fluffy truffle. Transfer to a piping bag and refrigerate until assembling the cake.

16. Make the cream filling
Whip 300 grams of cold heavy cream with 40 grams of powdered sugar. Beat at medium speed until the cream is stiff and firm. Transfer to a piping bag and refrigerate.

17. Soak the first sponge
Once the sponges, yolk, and syrup have cooled completely, you can assemble the cake. Place the first sponge on a serving plate and, using a silicone brush, soak it with a third of the syrup.

18. Add the truffle layer
Spread the truffle filling over the first sponge.

19. Add the second sponge
Place the second sponge over the truffle layer and soak it with another third of the syrup.

20. Add the cream layer
Spread the whipped cream over the second sponge, reserving a little for decoration.

21. Top with the last sponge
Finish with the last sponge and soak it with the remaining syrup.

22. Cover the sides with cream
Cover the sides of the cake with the whipped cream, reserving a little for the final decoration. Smooth it lightly with a spatula to even out the surface.

23. Add the crocanti almonds
Press 30 grams of crocanti almond cubes onto the cream on the sides, distributing them evenly around the cake.

24. Spread the yolk on top
On the top of the cake, spread the yolk mixture you prepared earlier. Smooth it with a spatula.

25. Toast the sugar
Sprinkle sugar over the yolk layer and toast it with a kitchen torch.

26. Decorate with cream
Put the remaining cream in a piping bag with a star nozzle and decorate the top edges as you like.

27. Chill until serving
Keep the cake in the refrigerator until ready to serve.
