Conejo en salsa de almendras is a traditional Spanish dish that turns simple ingredients into something deeply comforting. Rabbit pieces are browned, then slowly simmered in a luscious almond and bread sauce until the meat is tender and juicy. It's the kind of meal that calls for crusty bread to mop up every last drop.

Rabbit is a lean white meat with very little fat, which makes it ideal for braising. For 2 servings

  • 750 g rabbit, cut into pieces
  • Salt
  • Ground black pepper
  • 4 tablespoons olive oil
  • 60 g raw blanched almonds
  • 20 g bread (one thin slice)
  • 1 garlic clove
  • 75 g onion
  • 50 ml white wine
  • 500 ml chicken or meat broth
  • Fresh rosemary (optional, for garnish)

How to Make Conejo en Salsa de Almendras Step by Step

1. Season the Rabbit

First, season 750 g of rabbit pieces with salt and ground black pepper on all sides. Rabbit is a lean white meat with very little fat, so seasoning it well before cooking helps build flavor from the start.

2. Toast the Almonds

Place a cazuela or heavy pot over medium-high heat with 1 tablespoon of olive oil. When the oil is hot, add 60 g of raw blanched almonds and toast them for a couple of minutes until golden. Remove them from the pot and place them in a mortar. Set aside about 4 almonds per person for the final garnish.

3. Fry the Bread

In the same cazuela, add half a tablespoon of olive oil and fry the bread for about 1 minute per side until golden. Remove it from the pot and add it to the mortar with the almonds.

4. Brown the Rabbit

In the same cazuela, add 1 tablespoon of olive oil and when it's hot, add the rabbit pieces to brown them. Brown the rabbit for about 4 minutes per side, then remove it from the pot and set it aside.

5. Pound the Almonds and Bread

Pound the almonds and bread in the mortar until you have as fine a paste as possible, then set it aside.

6. Sauté the Garlic and Onion

In the same cazuela where you browned the rabbit, lower the heat to medium and add half a tablespoon of olive oil. When hot, add 1 finely chopped garlic clove and sauté for a few moments. Then add the finely chopped onion and a pinch of salt, and use a spatula to scrape up any bits stuck to the bottom of the pot from browning the rabbit. Stir and cook for about 5-6 minutes.

7. Add Wine, Broth, and the Almond Paste

Next, raise the heat, add 50 ml of white wine, and let it cook for a couple of minutes to reduce. Then add 500 ml of chicken broth and wait for it to come to a boil. As soon as it starts boiling, add the almond and bread paste a spoonful at a time.

8. Cook the Sauce

Mix the paste well into the broth and cook for 10 minutes over medium-low heat with the pot covered.

9. Blend the Sauce

Blend the sauce with an immersion blender until smooth.

10. Return the Rabbit to the Pot

Add the rabbit pieces back into the cazuela, raise the heat, and wait for the sauce to start boiling.

11. Simmer the Rabbit

As soon as it starts boiling, lower the heat to medium-low and cook for 40 minutes with the pot covered. Halfway through cooking, you can turn over the thicker pieces of rabbit.

12. Serve

Serve the rabbit in almond sauce garnished with the reserved toasted almonds and a few fresh rosemary leaves. For the final decoration, we'll use a few toasted almonds (about 4 per person) and add a touch of color with some fresh rosemary leaves, though thyme or parsley would work well too.
