How to Make Zeppole Step by Step
1. Prepare the cream
Start by making the cream. In a saucepan, mix 2 medium egg yolks, 60 g white sugar, 30 g cornstarch, 1 teaspoon vanilla paste, and 1 teaspoon sweet wine. Once well combined, add 300 ml milk and mix well.

2. Thicken the cream
Cook over medium heat, stirring constantly, until the cream thickens.

3. Cool the cream
Remove from heat and pour into a bowl. Cover with plastic wrap and let cool completely at room temperature.

4. Preheat oven and heat butter mixture
While the cream cools, prepare the zeppole dough. Preheat the oven to 200°C (392°F) with top and bottom heat and line a baking sheet with parchment paper. In a saucepan, combine 120 ml water, 60 g unsalted butter, 10 g white sugar, and 1 pinch salt.

5. Bring to a boil
Bring to a boil and let the butter just melt, then remove from heat.

6. Add flour and baking powder
Add 65 g flour and half a teaspoon baking powder and integrate with a spatula.

7. Dry the dough
Return to medium heat and let the dough dry gradually until a thin crust forms on the bottom of the saucepan.

8. Cool the dough
Remove from heat and transfer to a large bowl. Let cool for 5-10 minutes.

9. Incorporate the eggs

Cover with the top half, dust the surface with about 10 g powdered sugar, and pipe a small dollop of cream in the center of each zeppole. Finish by placing the 10 amarena cherries in syrup on top of each cream dollop.
