Puffed quinoa is a light, gluten-free ingredient packed with protein, and it works just as well at breakfast as it does for a mid-morning snack. This recipe gives you two simple ways to enjoy it: a fresh bowl with berries, pistachios and a drizzle of honey, and rich chocolate-covered bars made with peanut butter and coconut oil.
Making puffed quinoa at home is a laborious process and the grains end up more toasted than puffed, so the practical route is to use commercial puffed quinoa (sometimes sold as quinoa pop) from supermarkets, health food stores or online shops. It is ready to use straight from the pack, which makes both preparations quick and fuss-free.

The first idea is a breakfast bowl that comes together in minutes: cold milk poured over puffed quinoa, fresh and dried blueberries, toasted pistachios and honey. The second is a batch of no-fuss bars bound with honey, peanut butter and melted coconut oil, baked briefly, cut into six pieces and partly dipped in dark chocolate.

Ingredients for Puffed Quinoa
This makes 6 bars plus 1 breakfast bowl, enough for several snacks and a hearty breakfast.
- 10 g puffed quinoa (for the bowl)
- 5 fresh blueberries
- 5 dried blueberries
- 1 teaspoon toasted pistachios
- ½ teaspoon honey
- 200 ml milk
- 60 g puffed quinoa (for the bars)
- 30 g honey
- 50 g peanut butter
- 60 g coconut oil
- 75 g dark chocolate

How to Make Puffed Quinoa Step by Step
1. Assemble the breakfast bowl
In a bowl, combine 10 g of puffed quinoa, 5 fresh blueberries, 5 dried blueberries, 1 teaspoon of toasted pistachios and ½ teaspoon of honey. Pour 200 ml of cold milk over the top and a delicious breakfast is ready.

2. Mix the bar ingredients
In a bowl, combine 60 g of puffed quinoa, 30 g of honey, 50 g of peanut butter and 60 g of melted coconut oil. Stir the ingredients together until you have a uniform paste.

3. Press the mixture into a mold
Line a small rectangular mold with parchment paper and pour in the mixture. Use a spatula to press and compact the ingredients firmly into an even layer.

4. Bake for 15 minutes
Bake the puffed quinoa mixture for 15 minutes at 180 °C (350 °F) with top and bottom heat. Then take it out of the oven and let it cool completely.

5. Cut and dip in chocolate
Once cold, cut the mixture into 6 similar pieces. Melt 75 g of dark chocolate and dip each bar partially into the melted chocolate. Let the bars cool on a rack with the chocolate layer facing up, and once cold they are ready to eat.

6. Serve
Serve the puffed quinoa as a bowl with milk, in bar form, or simply straight from a bowl for snacking.

Tips for the Best Puffed Quinoa
Start with commercial puffed quinoa
Homemade puffed quinoa is laborious and the grains tend to come out toasted rather than properly puffed. Commercial puffed quinoa or quinoa pop is ready to use and gives the light, crisp texture these two preparations rely on.
Press the bars firmly
The coconut oil and peanut butter need to coat every grain so the mixture holds together. Take a moment to compact it well with a spatula before baking, and let it cool completely before cutting so the bars keep their shape.
Chill the chocolate coating
Dip the bars only partially and rest them chocolate-side up on a rack. If your kitchen is warm, pop the bars in the fridge for a few minutes so the dark chocolate sets with a clean, glossy finish.
