To make baby food, simply mix about 25g of rice flour with twice the amount of water and add this mixture to a saucepan with 250ml of boiling milk. Let the baby food boil for 4 minutes while stirring, then let it cool slightly and it's ready to eat. Optionally, you can add sugar.
  • As a thickener : Rice flour's high starch content makes it an excellent thickener, as it also results in a finer, silkier texture than wheat flour. To use rice flour as a thickener, first dissolve it in a little cold water, just like you would cornstarch, until it forms a paste. Then, add this mixture to the simmering sauce while stirring. This way, lumps won't form, which is what would happen if you added it directly to the sauce.
  • To make a gluten-free roux or béchamel sauce : rice flour is excellent for making a roux, which is a mixture of flour with oil or butter that is cooked before adding the liquid. This is another way to use rice flour as a thickener or to make a gluten free béchamel sauce.
  • For coating : Rice flour can be used on its own for coating, just like wheat flour, simply by substituting one for the other. It can also be used to make tempura batter by mixing it with cold sparkling water until you get a batter in which to dip the food to be coated just before frying.
  • In baking : rice flour is an excellent ingredient for making cakes, cookies, or pancakes, although in this case, it's usually necessary to mix it with other flours—such as almond or corn flour—so that the result has more consistency and doesn't crumble. In baking recipes, gluten provides elasticity, allowing cookies, cakes, or bread to maintain their shape and moisture. Rice flour can't compete with this result precisely because of the absence of gluten, and that's why, in the case of gluten free desserts, other ingredients are usually used to perform the gluten function.

How to make rice flour

Place 300g of rice in a blender, food processor, or Thermomix and blend at maximum speed for about 30 seconds. Scrape down the sides of the blender and repeat if necessary. Depending on the appliance's capacity, you may need to blend the rice in batches. Keep in mind that the process is quite noisy until the rice is completely pulverized.
