In this recipe, we're going to put a spin on classic pancakes to make banana pancakes by substituting wheat flour with oat flour, although if you prefer them without banana, but with oats, our oat pancakes are what you're looking for.
Pancakes have been on our tables longer than we think. They seem like a recent invention, but the truth is they've been cooked for a very long time. Initially, their ingredients were flour and water; later, eggs and milk were added, and they were mainly eaten during Lent.
Today, pancakes are very common in homes and cafes, for breakfast or as part of a Sunday brunch . The versions are endless, with or without eggs, with wheat flour or other types of flour, with or without sugar.
Pancakes don't usually have fat in the batter, although you can add a little while cooking them. You can also add fruit to the batter. We used ripe bananas, which was a great way to use up the overripe ones that aren't as appealing to eat on their own, and it also allowed us to make sugar-free pancakes.
When serving, they can be accompanied by fruit syrup and honey. Those with a sweet tooth can also serve them with whipped cream.

Ingredients for oat and banana pancakes for 4 people
- 2 ripe bananas
- 1 egg
- Half a teaspoon of ground cinnamon
- A pinch of salt
- 10 g of chemical raising agent (Royal type baking powder)
- 50 ml of unsweetened oat milk or drink (can be substituted with another type of milk)
- 100g of oat flour
- Sliced banana and agave syrup (optional for serving)

How to make oatmeal and banana pancakes
We mash 2 ripe bananas with a fork until we get a puree texture with few lumps.

We put the mashed banana in a bowl and add 1 egg, half a teaspoon of ground cinnamon, a pinch of salt, and 10g of baking powder. We also pour in 50ml of unsweetened oat milk and mix everything very well.

With the previous dough well mixed, we add 100g of oat flour and mix again.

We prepare a flat frying pan with a little oil, which we can spread with a brush or a piece of paper towel (adding oil is optional; the pancakes can be made without oil). We put the pan on the heat and wait until it is hot. We pour a large spoonful of batter into the pan.

We let the pancake cook on one side for a few seconds; the heat shouldn't be too high or they'll burn. We'll know they're cooked on the side we cooked first when we see bubbles rising from the batter. Then we flip it and let it cook on the other side. We continue making more pancakes.

We serve the freshly made pancakes with sliced banana and agave syrup. Alternatively, you can keep them in the refrigerator for a couple of days and warm them slightly in the microwave or oven before eating.
