For 6 servings

  • 1 medium egg
  • 100 g white sugar
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 25 g unsalted butter
  • 6 tartlet shells
  • Strawberries for decoration (optional)
  • 40 g heavy cream (at least 35% fat)
  • 75 g white chocolate
  • 6 tartlet shells
  • Blueberries for decoration (optional)
  • 80 g dark chocolate
  • 1 teaspoon vegetable oil (coconut or sunflower)
  • 6 pieces of sponge cake or sobaos, about 2 cm square
  • Chocolate shavings for decoration (optional)
  • 75 g milk chocolate
  • 10 g puffed rice

How to Make Petit Fours Step by Step

1. Prepare the lemon cream

Start by making the lemon tartlets. In a saucepan, combine 1 medium egg, 100 g white sugar, the juice and zest of 1 lemon, and 25 g unsalted butter. Cook over medium heat, stirring constantly, until the mixture thickens. Transfer the lemon cream to a bowl, cover with plastic wrap, and let it cool to room temperature.

2. Fill the lemon tartlets

Once the lemon cream has cooled, fill 6 tartlet shells with it. Optionally, decorate each tartlet with small pieces or a slice of fresh strawberry.

For the white chocolate tartlets, heat 40 g heavy cream in the microwave for about 30 seconds. Add 75 g white chocolate and mix well until the chocolate is completely integrated with the cream. Cover with plastic wrap and let cool to room temperature.

4. Fill the white chocolate tartlets

Once the white chocolate cream is cold, divide it among 6 tartlet shells. Optionally, decorate these tartlets with fresh blueberries.

5. Melt the dark chocolate

For the chocolate-dipped sponge cakes, melt 80 g dark chocolate in the microwave in 30-second intervals. Once melted, add 1 teaspoon vegetable oil to make it more fluid.

6. Dip the sponge cakes in chocolate

Place 6 square pieces of sponge cake, about 2 cm each, on a wire rack and coat them with the melted chocolate. To avoid messing the counter with melted chocolate, place a piece of paper under the rack.
