Pork vindaloo is a bold, tangy curry that traces its roots to the Portuguese presence in Goa. The name comes from the Portuguese dish vinha d'alhos, a meat marinade built on garlic and wine, but this version swaps wine for vinegar and adds the warm spices of Indian cooking. The result is a deeply flavored curry with a serious kick.

Making it at home is straightforward, though the pork marinates in two stages: first with vinegar and salt, then in a garlic, chili and spice paste. A gentle simmer finishes the job, leaving the meat fork-tender and the sauce thick and concentrated. Serve it with basmati rice and naan bread for a complete meal.

One of the best things about this recipe is how adaptable it is. If you prefer a milder curry, you can swap some or all of the dried chilies for milder dried peppers, use sweet paprika, or simply cut back on the fresh green chilies. The spice level is entirely in your hands.

Ingredients for Pork Vindaloo
This recipe makes 4 servings.
- 800 g pork stewing meat, preferably shoulder, neck or picnic roast
- 1 teaspoon salt
- 3 tablespoons wine vinegar
- 8-10 dried red chilies
- 1 tablespoon paprika
- ½ teaspoon cumin seeds
- 1 cinnamon stick
- 10 cloves
- ½ teaspoon black peppercorns
- 4 or 5 green cardamom pods
- 10 garlic cloves
- 1 piece fresh ginger, about 3 cm
- 1 pinch salt
- ½ teaspoon ground turmeric
- 2 tablespoons wine vinegar
- 3 or 4 tablespoons mild oil
- 6 garlic cloves
- 2 medium onions
- 2 tomatoes
- 2 or 3 fresh green chilies
- 1 teaspoon sugar
- 1 tablespoon wine vinegar
- Fresh cilantro
- 1 red chili

How to Make Pork Vindaloo Step by Step
1. Marinate the pork with vinegar
Start by taking 800 g of pork stewing meat, trimming off any excess fat, and cutting it into bite-sized pieces. Place the pork in a bowl and season with 1 teaspoon of salt and about 3 tablespoons of wine vinegar. Mix well, cover, and let it rest in the refrigerator for 2 to 3 hours.

2. Grind the whole spices
While the pork rests, prepare the paste for the second marinade. Remove the stems and seeds from about 8-10 dried red chilies and grind them together with 1 tablespoon of sweet paprika, ½ teaspoon of cumin seeds, 1 cinnamon stick, 10 cloves, ½ teaspoon of black peppercorns, and the seeds from about 5 green cardamom pods. The mixture should be as fine as possible. Optionally, before grinding, you can toast the whole spices — never the ground ones — for a couple of minutes over heat, stirring constantly, to boost their aroma.

3. Make the garlic and ginger paste
Next, in a mortar, crush 10 garlic cloves and a 3 cm piece of fresh ginger with a pinch of salt. It doesn't need to become a smooth paste, but it should be finely broken down. Then add ½ teaspoon of ground turmeric, 2 tablespoons of wine vinegar, and the spices you just ground. Mix everything together until you have a paste.

4. Marinate the pork in the spice paste
Once the pork has marinated in the vinegar, add half of the garlic and spice paste you just made. Mix well and, as before, let it rest covered in the refrigerator. This time, it's best to leave it until the next day. Set aside the other half of the paste separately.

5. Sauté the garlic and onions
The next day, heat 3 or 4 tablespoons of mild oil in a pot and lightly brown about 6 crushed garlic cloves. Add 2 medium onions cut into thin julienne strips. Mix well and cook over medium heat, stirring occasionally, until the onions are soft and translucent. Finish by adding half of the green chilies, seeded and cut into thin strips.

6. Add the spice paste and tomatoes
Immediately after, add the half of the spice paste you set aside, along with 2 diced tomatoes, 1 teaspoon of sugar, and 1 more tablespoon of wine vinegar. Continue cooking for about 15 or 20 minutes, until the tomato loses all its water and the spice paste darkens slightly and is well sautéed.

7. Add the pork and its marinade
Once the base is ready, add the pork along with all its marinade. Stir so the meat is coated with the sauce and cook for a few minutes over medium-high heat, stirring frequently, until the meat changes color and starts to release its juices.

8. Simmer the vindaloo
Then, add just enough water to cover the meat, mix well, and once it comes to a boil, lower the heat, cover the pot, and cook for 30 minutes. Finally, uncover and cook for another 15 to 20 minutes, until the meat is tender and the sauce has thickened.

9. Finish with fresh chili and cilantro
Finally, if desired, add the remaining green chili, seeded and cut into thin strips, once the meat is cooked. Just stir them in lightly. Serve with chopped cilantro on top and a few thin slices of fresh red chili for a pop of color. And it's ready!

Tips for the Best Pork Vindaloo
Adjust the spice level
If you want a milder vindaloo, you can replace all or part of the dried chilies with ñoras, choricero peppers, or other dried peppers, which give a similar flavor without the heat. Another option is to use sweet or bittersweet paprika. As for the green chilies, you can simply reduce the amount or leave them out entirely.
Toast your spices for more flavor
Before grinding, you can toast the whole spices — cumin seeds, peppercorns, cloves, cardamom, and cinnamon — in a dry pan for a couple of minutes over medium heat, stirring constantly. This wakes up their essential oils and gives the curry a deeper, more aromatic flavor. Just be careful not to burn them, and never toast ground spices like paprika or turmeric.
Serve with the right sides
Basmati rice and naan bread are the classic accompaniments for pork vindaloo. The plain rice balances the richness of the sauce, while naan is perfect for scooping up every last bit. A simple cucumber raita or a fresh salad also works well to cool the palate.
