Potato bread is one of those loaves that quietly becomes a household staple. The mashed potatoes give it a soft, dense crumb that holds up to any filling, from a simple buttered toast to a loaded sandwich.

Ingredients for Potato Bread

This recipe makes 24 slices.

  • 250 g potatoes
  • 350 g wheat flour
  • 8 g salt
  • 5 g sugar
  • 5 g dry baker's yeast
  • 150 g warm milk (plus 1 tablespoon for brushing the bread)

How to Make Potato Bread Step by Step

1. Boil and mash the potatoes

First, peel and cut 250 g of potatoes into small pieces. Boil them in plenty of boiling water for about 10-15 minutes until tender. Then drain them, mash them, or pass them through a potato ricer, and keep 200 g of this puree for our bread. Let it cool down before mixing it with the other ingredients.

2. Mix the dry ingredients with the potatoes

Next, put 350 g of wheat flour, 8 g of salt, 5 g of sugar, 5 g of dry baker's yeast, and the cooked mashed potatoes in a bowl. It is important that the potatoes are not hot when you make this mixture, as they could deactivate the yeast.

3. Add the milk

Pour in the warm milk and stir everything together until a shaggy dough forms.

4. Knead and form a ball

Knead by hand or with a stand mixer on medium speed for 8 minutes. Form a ball, cover it with a cloth, and let it rise for 90 minutes until it has doubled in size.

5. Let the dough rise

After the resting time, the dough will have doubled in size.

6. Punch down and shape the loaf

Press down the dough to release the air and shape it into a log, keeping the seams underneath. Place the dough in a greased elongated loaf pan or one lined with parchment paper.

7. Let the dough rise again

Cover the dough again with the cloth and let it rise for another 90 minutes, until it doubles in volume again. Shortly before this second rise ends, preheat the oven to 180 °C.

8. Brush with milk and bake

Brush the bread with 1 tablespoon of milk and bake at 180 °C for 30 minutes until golden and crisp-looking. Remove the bread from the oven and let it cool on a wire rack.

9. Serve the potato bread

Once cool, you can slice and serve or use this delicious potato bread as you like.

Tips for the Best Potato Bread

Use leftover mashed potatoes

You can use plain mashed potatoes left over from another dish, as long as they are unseasoned. Just make sure they are at room temperature before mixing.

Freeze for later

Once cold, you can freeze the potato bread already sliced so you always have it on hand. Thawing is as easy as leaving it at room temperature for a while or putting the frozen slice directly in the toaster.
