This recipe makes 1 generous sandwich.
- 1 piece of tomato
- Salt (optional)
- 1 hard-boiled egg
- 2 slices of sandwich bread (white or whole wheat)
- 1 tablespoon butter, at room temperature
- 2 tablespoons mayonnaise
- 1 leaf of iceberg lettuce (or any type you prefer)
- 1 small can of tuna in olive oil (about 55 g)
- 5 canned white asparagus (optional)

How to Make Veggie Tuna Mayo Sandwich Step by Step
1. Slice the tomato and egg
Cut a clean piece of tomato into slices, between 2 and 4 depending on how thick you like them. If you want to boost the flavor, sprinkle on a pinch of salt. Peel the hard-boiled egg and slice it as well.

2. Butter and lightly toast the bread
Take the 2 slices of sandwich bread and spread 1 tablespoon of butter on both sides of each, keeping the layer thin. Soft butter makes this much easier and means you need less, so let it sit out first if you can. Once buttered, toast the slices lightly on both sides in an ungreased skillet over medium-high heat.

3. Spread mayo on the inner faces
Now build the sandwich. Start by spreading a thin layer of mayonnaise on the inner faces of the bread. Don't use all of it, because you will need a little more later.

4. Add the lettuce
On top of the mayonnaise, place 1 lettuce leaf, cleaned and well dried. You can do this two ways depending on what you prefer: shred the lettuce finely, or leave it whole and trim the edges so it doesn't stick out. Here we went with the second option.

5. Layer on the tomato
Next, simply arrange the tomato slices over the lettuce. Overlap them slightly so they fit neatly inside the edges of the bread.

6. Add the hard-boiled egg
Add the hard-boiled egg slices on top of the tomato.

7. Flake the tuna over the egg
Drain the tuna, flake it with a fork and scatter it over the egg. This is a generous sandwich, so use about 55 g of olive-oil-packed tuna (drained weight), which is roughly one small round can from the supermarket.

8. Spread the rest of the mayo
This step is optional, but we love it because it adds extra juiciness. Spread the remaining mayonnaise over the tuna.

9. Finish with the asparagus
Finish with the extra ingredients. In our case we always go for about 4 or 5 canned white asparagus spears.

10. Close the sandwich and serve
All that's left is to close the sandwich and enjoy it right away. You can eat it whole or cut it in half as shown in the photo.
