- 2 garlic cloves
- Half a medium onion
- 1 celery stalk
- 1 carrot
- 3 tablespoons olive oil
- 400 g stewing beef, cut into cubes
- Salt
- Ground black pepper
- 50 g crushed tomato (fresh or canned)
- 1 tablespoon wheat flour
- 330 ml Guinness beer
- 300 ml beef broth
- 1 bay leaf

How to Make Guinness Beef Stew Step by Step
1. Prep the Vegetables
The first thing to do is finely chop 2 garlic cloves, dice half a medium onion and one celery stalk into small squares, and slice 1 carrot into thin rounds.

2. Brown the Beef
Place a pot over medium-high heat with 2 tablespoons of olive oil. Once the oil is hot, add 400 g of stewing beef cut into cubes and brown for about 3-4 minutes until well seared on all sides. At that point, season with salt and ground black pepper, then remove from the pot and set aside.

3. Start the Sofrito
In the same pot, add 1 more tablespoon of olive oil. When the oil is hot, add the garlic and sauté for a few moments. Then add the onion and celery. Stir well, add salt to taste, and let it cook for about 5-6 minutes over medium heat.

4. Add Carrot and Tomato
Add the carrot, mix it into the sofrito, and cook for 3-4 minutes. Then stir in 50 g of crushed tomato, plus salt and ground black pepper to taste, and cook for another couple of minutes.

5. Thicken and Add the Guinness
Now raise the heat a little and add 1 tablespoon of wheat flour. Mix well and cook for 1 minute. Immediately pour in 330 ml of Guinness beer, stir, and cook for 2 minutes over high heat.

6. Return the Beef and Add Broth
Next, add the beef back to the pot along with 300 ml of beef broth and 1 bay leaf. Stir everything together and wait for the broth to come to a boil.

7. Simmer Until Tender
As soon as it starts boiling, let the meat cook for 1 hour and 30 minutes over low heat with the pot covered, until tender. After that time, your delicious Guinness beef stew is ready to serve.

The only secret to a truly luxurious stew is a long, slow simmer over low heat. The meat should be gently bubbling away for one and a half to two hours, depending on the cut. Choose the Right Beef and Broth
For this recipe, ask your butcher to cut stewing beef into medium chunks. I use beef broth for cooking, but you could also use chicken broth if you want a stew with a slightly milder flavor.
Make It with or Without Potatoes
You can make this stew with or without potatoes. This time I prepared it without potatoes, but if you want to serve it with them, add about 125 g of potatoes per person, broken into medium chunks, when the stew has about 20 minutes left to cook. If you make it without potatoes, a perfect side would be mashed potatoes.
