Tarta Capuchina Recipe: Classic Spanish Egg Yolk Cake
This page may contain affiliate links.

Tarta capuchina is a classic Spanish dessert with deep roots in convent baking, where egg yolks were used to create rich sweets while the whites went to other uses. The result is a moist, delicate cake that soaks up syrup and gets covered in a silky pastry cream.

This version keeps things simple with basic tools, though you can torch a steel skewer to create the traditional toasted sugar lattice if you like. Serve it chilled in neat slices for a truly special bite.

  • 1 tablespoon butter, for greasing the pan
  • 10 g confectioners' sugar
  • 12 medium egg yolks
  • Zest of 1 lemon
  • 40 g cornstarch
  • 100 g water
  • 150 g white sugar
  • 3 medium eggs
  • 150 g white sugar
  • 75 g water
  • 15 g cornstarch
  • 20 g confectioners' sugar

How to Make Tarta Capuchina Step by Step

1. Prepare the Pan

Preheat the oven to 150°C (300°F) with top and bottom heat. Grease a 20 cm (8-inch) round pan that is not springform, because the cake bakes in a water bath and no water should seep in. Line the base with parchment paper and dust the sides with 10 g of confectioners' sugar.

2. Whip the Yolks

Beat 12 medium egg yolks with the zest of 1 lemon and 40 g of cornstarch for 10–15 minutes, until the mixture triples in volume and becomes pale and thick.

3. Fill the Pan

Pour the yolk mixture into the prepared pan and tap it gently on the counter to release any large air bubbles.

4. Bake in a Water Bath

Set the pan inside a larger roasting pan and add water until it reaches about halfway up the sides of the cake pan. Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.

5. Make the Syrup

While the cake bakes, combine 100 g of water and 150 g of white sugar in a small saucepan. Bring to a boil and, as soon as the sugar dissolves, remove from the heat and set aside.

6. Mix the Pastry Cream

In another saucepan, combine 3 medium eggs, 150 g of white sugar, 75 g of water, and 15 g of cornstarch. Whisk well until completely smooth.

7. Thicken the Pastry Cream

Cook the mixture over medium heat, stirring constantly with a whisk, until it thickens. Remove from the heat, transfer to a bowl, cover with plastic wrap, and let cool to room temperature. Then refrigerate until ready to assemble the cake.

8. Soak the Cake

When the cake is done, remove it from the oven and prick the entire surface with a toothpick. Pour the syrup evenly over the top. Let cool to room temperature, then cover with plastic wrap and refrigerate overnight so the syrup soaks in completely.

9. Cover with Pastry Cream

The next day, unmold the cake and remove the parchment paper from the base. Spread all the chilled pastry cream over the top and sides of the cake, covering it completely.

Tips for the Best Tarta Capuchina

Use a Solid Pan for the Water Bath

A springform pan will let water seep in during baking, ruining the texture. Use a solid round pan and line it well so the cake releases cleanly after chilling.

Let It Soak Overnight

The cake needs a full day in the fridge to absorb the syrup and become wonderfully moist. Don't rush this step; it is what gives Tarta Capuchina its signature texture.

Add the Traditional Toasted Lattice

If you have a blowtorch, heat a steel skewer and use it to create a toasted sugar lattice on top, just like the classic version from Spanish pastry shops.

30 Go-To Recipes I Keep Coming Back to in My Own Kitchen

Universal Meals: Recipes

Like a lot of home cooks, I like having a rotation that covers cozy classics, dishes from around the world, and sweets that make everyone happy.

Some nights I want something luxuriously rich, and that's when I reach for this La Viña Molten Cheesecake recipe, this refined Original French Crème Brûlée recipe, or a truly indulgent Chocolate Mousse Cake recipe. And on days when I'm after something fruity and soothing, this timeless French Tarte Tatin recipe is my reliable pick.

For mornings that call for something easy and for lighter plates, I'll whip up these airy Oatmeal and Banana Pancakes recipe, a hearty Stuffed Sweet Potato recipe, or these bright Eggs Stuffed with Avocado and Salmon recipe. And whenever I need a gluten-free staple for the pantry, this straightforward Gluten-Free Rice Flour recipe does the job.

When tapas and Mediterranean cooking are calling, I tend to cycle through this punchy Basque Tuna with Tomato recipe, crispy Patatas Bravas Air Fryer recipe, silky Tirokafteri Greek Dip Sauce recipe, and a cool Burrata Salad with Tomato and Pesto recipe. This crisp Italian Vitello Tonnato recipe is another one I love to serve when the occasion feels a bit more special.

Hearty midday meals and comforting suppers? These are the ones I'm always recommending: this warming Meatballs in Spanish Sauce recipe, traditional Meatballs in Almond Sauce recipe, deeply savory Italian Bolognese Sauce recipe, and velvety Chicken Croquettes in Thermomix recipe. After years of cooking, testing, and tweaking in my own kitchen, I've come to believe the greatest dishes boil down to three things: straightforward methods, techniques you can trust, and serious flavor.

Every recipe gathered here is one I genuinely cook over and over—whether it's a fast meal just for me or something a little more celebratory for friends and family.

On the sweet side, the rich, silky Orange Chocolate Mousse Recipe is a go-to when I want something that feels fancy yet comes together without fuss. Another dessert I adore is the caramelized Trdelnik Slavic Pastry Recipe, modeled on the well-known Central European chimney cake. If baking is your thing, knowing how to make syrup for better dessert texture helps a lot, and my Inverted Sugar Recipe walks through exactly how I do it at home.

When something light and uncomplicated is what I'm after, I'll usually make the classic Italian Caprese Salad Recipe or a flawlessly cooked Simple Poached Egg Recipe. For cozier, more filling meals, I frequently point people to the satisfying Meatball Sandwich Recipe, the creamy Russian Stroganoff Beef Recipe, and the fast weeknight winner One Pot Pasta Recipe.

I'm also a big fan of sharing dishes with roots in other countries, such as the authentic Sorropotún de Bonito Fish Stew Recipe, crispy Chilean Pumpkin Sopaipillas Recipe, and the traditional Spanish Cochifrito Segovian Fried Pig Recipe.

Air fryer cooking is another category I turn to often, since it cuts down on time without sacrificing texture.
