For 9 servings
- 2 medium eggs
- 50 g white sugar
- 350 ml whole milk
- 50 g semolina
- 100 g unsalted butter (plus a little more for greasing the pan)

- 1 teaspoon vanilla paste
- 8 sheets filo pastry
- 100 g cold melted butter
- 1 tablespoon powdered sugar
- 1 pinch cinnamon

How to Make Bougatsa Step by Step
1. Beat the eggs and sugar
Preheat the oven to 180 °C with top and bottom heat. Beat 2 medium eggs and gradually add 50 grams of white sugar. Beat for 2-3 minutes, until the mixture is nicely frothy.

2. Add the milk
Transfer the egg mixture to a saucepan and add 350 ml of whole milk.

3. Thicken over medium heat
Cook the mixture over medium heat, stirring constantly, until it thickens. The texture should be similar to that of custard.

4. Incorporate the semolina
Off the heat, add 50 grams of semolina and whisk it in very well until there are no lumps. Return to medium heat and cook for 1 minute, stirring constantly, until it thickens slightly.

5. Add the butter
Remove from the heat, add 100 grams of unsalted butter and stir until fully incorporated.

6. Flavor and set aside
Add the zest of 2 lemons and 1 teaspoon of vanilla paste. Cover with plastic wrap and set aside.

7. Build the filo base
Grease and line a square pan about 20 cm per side. Lay down 1 sheet of filo pastry and brush it very well with the cold melted butter. Repeat with 3 more sheets. In total, the base should have 4 sheets of filo brushed with butter.

8. Pour in the custard
Pour in the reserved custard and smooth it out with the help of a kitchen spatula.

9. Top with filo and bake
Place the remaining 4 sheets of filo on top, arranging them however you like. We placed ours slightly crumpled and with some volume for a showy finish. Spread the remaining melted butter over the entire surface and bake the bougatsa for 45 minutes at 180 °C, until well golden.

10. Let it cool
Remove the bougatsa from the oven and let it cool for about 45 minutes. Then unmold it and let it cool completely.

11. Dust with sugar and cinnamon
Once cold, dust it with 1 tablespoon of powdered sugar, sifted through a strainer so it spreads evenly over the entire surface of the cake, and 1 pinch of cinnamon.

12. Serve
Serve the bougatsa immediately to enjoy that irresistible crunch that contrasts with its creamy interior.
